TouchOSC layouts have two defining properties, size and orientation. These properties can be edited in the property panel on the left when no controls are currently selected in the editing view.
Layout Size can be any of a list of presets or a fully custom size.
Please note that the TouchOSC application will always scale layouts proportionally to the actual screen resolution of the device it is running on, so the most important factor here is that you select an aspect ratio that is close to the physical size of the hardware you are planning to use.
Therefore, actual pixel size is less relevant and is only displayed as a sort of orientation and guideline. TouchOSC renders all its controls using scale-able vector graphics technology and will adjust to the hardware display's density and size.
A layout can either be oriented vertically or horizontally depending on how you are planning to setup/place your device.
